We get asked this at the farm gate most weekends, usually while someone is holding a bottle of each and trying to work out why one costs four times the other. It is a fair question, and most of the answers online are written by people who have never stood next to a still.
So here is the honest version, from a farm in Richmond, British Columbia that makes both of them out of the same batch of flowers.
What is a hydrosol?
A hydrosol is the water that comes out of a steam distillation, carrying the water-soluble aromatic compounds of the plant it passed through. You will also see it sold as floral water, hydrolat, or in our case lavender water. Those are all the same thing.
It looks like water. It is not. Plain water that has never been near a plant has no scent and no plant chemistry in it. A hydrosol has both, in a form gentle enough to mist straight onto skin.
Both come out of the same still
This is the part that makes everything else make sense.
We cut lavender, pack it into the still, and pass steam up through it. The steam picks up the plant's aromatic compounds and carries them off. Then it hits a condenser and cools back into liquid.
What collects at the bottom separates into two layers, because oil and water do not mix:
- A thin film floating on top — that is the essential oil.
- The water underneath it — that is the hydrosol.
One run. One batch of flowers. Two products. Nothing is added to either of them.
A hydrosol is not diluted essential oil
This is the single most common misunderstanding, and it matters.
If you took essential oil and stirred it into water, you would get essential oil floating in water, because it does not dissolve. That is not what a hydrosol is.
During distillation, the plant's compounds split by how they behave in water. The ones that do not dissolve go into the oil. The ones that do dissolve stay in the water. So a hydrosol carries a genuinely different set of the plant's chemistry than the oil does — not a weaker version of the same set.
That is why a good lavender hydrosol smells softer and rounder than the oil, rather than just fainter. It is a different part of the same plant's character.
Which one do you actually want?
Almost everyone who asks us the difference is really asking this. Here is the short version.
Choose hydrosol if you want to…
- Mist your face, neck or hands during the day
- Spray a pillow or bed linen before sleep
- Freshen a room, a car or a gym bag
- Use lavender daily, on skin, without thinking about dilution
- Give lavender to someone whose skin is easily irritated
Choose essential oil if you want to…
- Run a diffuser
- Blend into a carrier oil for massage or body care
- Make your own soap, balm, candle or bath product
- Scent laundry or drawers with a few drops
- Buy something concentrated that lasts a long time per bottle
If you only ever buy one and you mostly want to wear lavender rather than diffuse it, buy the hydrosol. It is the one people finish and come back for.
Can you put it directly on skin?
Hydrosol: yes. That is what it is for. No dilution, no carrier oil. Mist it and let it dry.
Essential oil: no, not neat. Undiluted essential oil on skin is a genuinely bad idea — it is concentrated enough to cause irritation or sensitisation, and sensitisation does not go away once you have it. Dilute it into a carrier oil first. If you want lavender on your skin every day with no arithmetic involved, that is the hydrosol's whole job.
As with anything new on skin, patch test first, and if you are pregnant, treating a medical condition, or using it on a child, ask a professional rather than the internet.
How long does each one keep?
Essential oil keeps for a couple of years or more with the cap closed, somewhere cool and dark. What degrades it is light, heat and oxygen — not time sitting quietly in a cupboard. A half-empty bottle ages faster than a full one, because there is more air in it.
Hydrosol is water-based, which makes it the shorter-lived of the two. Treat it like something fresh: keep it out of direct sun, keep the nozzle clean, and refrigerate it if you want the longest life out of the bottle. A hydrosol past its best turns sour and slightly yeasty instead of floral. You will not need a date on the bottle to tell — your nose will do it.
A chilled lavender mist in August is also, incidentally, the best argument for keeping it in the fridge.
Why hydrosol is cheaper — and why that is not a quality signal
Essential oil costs more per millilitre because it takes an enormous quantity of flower to produce a small quantity of oil. The hydrosol from the same run comes out in far greater volume.
That price gap says something about yield. It says nothing about which product is better made, or which one you should buy. A hydrosol is not a by-product we are finding a use for — it is a product we distil deliberately, and for most people's daily use it is the more practical of the two.
Three cultivars, three different scents
Something most guides skip: lavender is not one smell. We grow three cultivars and distil each separately, so the difference carries into both the oil and the hydrosol.
- Melissa — floral and elegant, lifted by a citrus-lemon note. The one people reach for at bedtime.
- Superblue — our culinary English lavender. Sweet, honeyed, low in camphor, and the gentlest of the three.
- Grosso — a lavandin. Bold and herbaceous with a fresh camphor finish. This is the scent most people picture when they think of lavender.
One note on names: our Melissa is a lavender cultivar. It is not lemon balm, Melissa officinalis, which is a different plant sold under the same word. Worth knowing if you are comparing labels.
The short answer
Essential oil is the concentrate: powerful, cheap per use, and it must be diluted. Hydrosol is the water from the same still: gentle, ready to use, and the one that ends up in daily rotation.
Most households want both, and use the hydrosol ten times as often.
