A quarter teaspoon changes a whole batch of shortbread. Half a teaspoon ruins it.

That is the entire skill of cooking with lavender, and it is why we grow Superblue in its own rows and cut it for the kitchen rather than for bouquets. English lavender, low in camphor, picked at full bloom and dried whole.

The lavender sold in craft shops is a different plant — usually Grosso, bred for scent and stem length, and high enough in camphor to turn a cake medicinal. Culinary grading is not a marketing word. It is the difference between floral and soapy.

How to use them

  • Baking — start at a quarter teaspoon per batch of shortbread or scones. Grind the buds with a little of the sugar so it spreads evenly.
  • Syrup — a tablespoon per cup of simple syrup, off the heat, twenty minutes, then strain.
  • Savoury — a pinch in a rub for lamb or chicken. It sits beside thyme and rosemary, not instead of them.
  • Finishing — a few whole buds on frosting or a cocktail, as much for the colour as the flavour.

Treat it like a herb, not a garnish, and it will behave.

Keeping them

Airtight, dark, away from the stove. A year or more of flavour if the light never gets at them.
